So I made this awsome pork stew. I found an on-line rec. with some fancy Italian name, altered it and wow, so good.
Ingredience:
3 Churizo sauceges - any spicy pork one will do
1 large piece of pork (twice the volume of the Churizo roughly) I used the back half of a loin roast.
3 large gold potatos
1 acorn squash - butter cup (not nut) would also work
1 red, 1 yellow and 1 orange pepper
2 celerie stocks
1 can diced tomatos
1 large white onion
3 cloves of garlic
4 cups stock (I used 2 cups veg and 2 cups chicken)
1/2 c flour
salt & pepper, chilly flakes, italian seasoning, cracked corriander
fresh savoury and fresh thyme
Cooking:
Dice up everything, big and chunky but one bite size. Taking the skin off the squash and if desired the potatos. The garlic is a fine dice.
You will need a pan and eather a slow cooker or dutch oven.
Soften the garlic and onions in the pan - into the pot
Brown the Churizo bits - into the pot
Shake the flour over the roast bits with salt and pepper and some of the other seasonings
Brown in pan - into the pot
Add the stock and potatos turn on the heat, get to boil and lower
About 1 1/2 - 2 hours later add the rest of the ingredence (except fresh herbs) and cook another 45 mins.
Salt and pepper at every step during the process
Taste adjust seasoning. Add fresh herbs
Note: before I added the herbs, the liquid was a little too watery for my personal taste, I took everything out and reduced the liquid and added a little corn starch, then added the herbs, put it all back in, mix and serve.
