Coddle
Someone asked what this was recently (I forget who) so I figured I would post it. This is something I grew up on, I have changed the rec a little to make it tastier (ya my mom's rec but well.... we will leave it at that). This is not just an Irish dish this is a "poor side of Dublin" dish and it is warm home food.
8 - 10 sausages (breakfast ones - the little pork guys)
ham roast left over or excess 1 1/2 times volume of sausages ( or use peameal bacon or even streaky bacon or all of the above) it is "the poor man's dish, he used what he had...
a few carrots (if you like)
4 -5 potatos cubed (chunky big ones)
2 leaks 1/2'ed and chopped chunky
1 large onion
1 L water
1 L veg or beef stock
salt and pepper
chop up your meats. into pot
add you liquids, bring to boil, cover for 5 mins
add everything else also chopped up, salt and pepper to season a bit
add more liquid if needed to make sure everything is covered
cover and slow cook for an hour or two
check seasoning, adjust as needed
serve warm and with a large piece of buttered un toasted white bread. I tend to just butter a whole bunch and put in center of table for everyone to take as they like.
It is simple and easy and the flavours are quite homely. In a world where I tend to get really complex foods this one is always enjoyed.
