| 2 racks of what ever type of ribs you like (center, side, full - don't care) 1 large lazinia (sp) pan -deep dish, (tin or glass - don't care) 2 large carrots 2 large onions 4 -5 stocks of clelry (you can skip this Dral) sub some dry herbs 3 dry bay leaves 2 cups white wine ok.. here we go rub salt and pepper all over room temp ribs - both sides rough chop all veggys, big chunks into pan wine into pan ribs on top of veggys - should not be touching wine so adjust as needed - hense big veggy chunks Tent with only one small forked hole set for steam escape (that mean foil cover use BBQ foil bigger and easier to make tent) Bake at 350 for about 3 hours, 4 if big ribs take out of oven and allow to rest for 30 mins, un tented. cover with desired sauce, place on cookie sheet (meat side down) and in top rack of oven broil for 15 mins, basting ever 3 - 4 mins and turing once usually at first basting - you want all the colour on the top. Note: ovens vary, when basting WATCH CLOSELY OR YOU WILL BURN THEM!!! DO NOT LEAVE THEM UNATTENTED. | |

| Did this recipe up at the cottage came out awesome.. My only input is I tried to finish them off on the grill which sort of worked.. but the meat was too tender and I lost some of it. So maybe less cooking time in hte oven for the grill?
The taste was super and the veggies with the pork drippings and wine were delicious as well. | |

The taste was super and the veggies with the pork drippings and wine were delicious as well. I maintain no such thing as "too tender" when it comes to pork! Also if you lost some of the meat it is due to your tong skills and lack of patiance when flipping. | |

| We had a pot-luck lunch at work today, so I made up a couple of racks.
I used Dis' suggestion of subbing out the wine for some whiskey and apple juice. Everyone at the office loved them.
